LINCOLN (SNR) – St. John the Apostle School in Lincoln will hold a unique fundraiser this month to support Catholic education: a food truck event March 20.

Each year, St. John’s eighth-grade class and parents host a dinner to raise money for the school endowment fund. Normally, the dinner is a themed event with a sit-down catered meal and bar, a silent auction, live auction, and entertainment.

This year, for the first time in its 20-year history, the event will be opened up to guests beyond the school walls with an outdoor, to-go style evening, featuring five local food trucks, two locally-featured dessert tables, and a live DJ in the St. John parking lot at 76th and Vine streets from 4 to 8 p.m.

There is no charge to enter, but opportunities to give free-will donations will be available.

Food trucks Granny Weavs, Phil’s Fish and Chips, Chick-Fil-A, Taco Loco, and 3 Chicks and a Wagon will accept cash or charge for purchase of their items.
The St. John the Apostle School Endowment Fund was established in 2001 with the purpose of perpetual support for the school, and is a visible sign of the parish’s commitment to Catholic education. St. John School opened in 1954 and serves more than 300 students in grades pre-K through 8.

Organizers said the endowment fund is now more important than ever with the rising costs of technology and maintaining a COVID-safe environment for schoolchildren. They are looking forward to the modified event this year.

“We are excited and impressed with what we’ve been able to do,” said Karmin Pedroza, 2021 endowment event co-chair. “We started with the idea of being able to give back to the community that has supported us so well over the years, and decided that we could bring in local businesses and open the event up to the neighborhood.”

This year’s auction, hosted solely online from March 20 to 27, has one of the biggest selections in the fundraiser’s history. More than 135 items have been donated, featuring mostly items from local businesses. Attendees can rest assured that the auction will still have the stand-by favorite items like a trip with pastor Father Lyle Johnson and golf outings.
